Notes: We started fermentation with a co-pitch of Brettanomyces Anomala and London Fog, adding a hop charge of Sitiva and Zamba just as fermentation started in earnest.
After fermentation, we canned Sitiva still with sugar and a little yeast, letting it carbonate naturally in the can.
We also got hop biotransformation in droves. What teemed with dank stone fruit aroma in the fermenter smelled like a bouquet of fresh cut jasmine and lavender in the can, and tasted like dandelion and orange zest. (6%)
